What’s for breakfast?
With most classic breakfast items containing wheat – cereal, bagels, donuts, waffles, toast…- I find that most people have the hardest time giving up wheat first thing in the morning. A big breakfast of bacon and eggs is always an option, but who has time for that on most days? My answer- frittatas. Even better? Mini frittatas. These are super tasty and really easy to make. You can put pretty much any kind of fixin’ in there, as long as you chop it up small enough to fit in the mini muffin pan. My favorite is pancetta, onion, sweet potato and spinach. Best part is you can make enough to last you all week and just take a few minutes to heat it up in the morning. Regular size frittatas are just as easy, but not as cute.
Looking for fancier weekend brunch items? Check out these waffles and pancakes. Those two websites are great for finding gluten free recipes made with coconut and almond flours. Both of these alternatives to wheat are high in protein, healthy fats, vitamins and minerals and WAY better than the typical GF rice and potato starches. The consistency is a bit tricky sometimes, so you can’t just sub out these flours in a regular recipe. Using a recipe especially formulated for the almonds or coconut is the way to go.

If you’re struggling with replacing that filling feeling you get from grain, I recommend steel-cut oats. They’re nutty, chewy and delicious…way better than “regular” oatmeal (rolled oats) or that nasty instant stuff. Add in some blueberries and almonds and you’re golden.
Easiest way ever: Mini crock-pot, started the night before. Almost as easy: Start the night before, add water and oats to a pan and cover to soak overnight. In the morning, boil for five minutes…done! You can also make a mess of oatmeal over the weekend (cook until just al dente), store in the fridge, and heat up a single serving with a little additional water in the microwave in the mornings. Only takes about a minute, although getting the consistency right can be a little tricky.
I’m all about almonds and goji berries. Eaten together, they’ve got a great flavor. I’ve been paleo on weekdays and relaxing the diet on the weekends, still no pizza or anything like that. The main thing I’ve noticed with paleo is the performance boost I get during a WoD.
