Gluten Intolerance: More than Celiac Disease and Tummy Aches
In case you’re not sold on the reasons behind going gluten-free, here’s some scientific research to back up the strongly held belief by many that wheat is the devil.
Here’s a link to a study excerpt published in the journal GUT (starts in middle of first page). It’s written in serious scientific jargon, but is basically saying that the majority of study subjects without celiac disease experienced an inflammatory immune reaction to eating wheat. Note that gliadin is another protein found in wheat. This is a very small study which does not prove anything necessarily, but studies like this pave the way for larger scale trials and more definitive answers.
